Bresaola is a raw, cured beef salami that is air-dried and matured for two to three months. Bresaola della Valtellina PDO is produced exclusively in the province of Sondrio, which is also known as "Valtellina" after the main valley that runs through it. Valtellina is a narrow region in the central Alps between Italy and Switzerland.

The special climate of the valley is the main secret in the production of Bresaola, but also the selection of meat from cows aged between 18 months and 4 years, making it a unique and incomparable product. Punta d'anca (Eye of the silverside), is the clean cut of meat they use to produce it.

Wine, pepper, juniper, dried bay leaves, nutmeg, cinnamon, garlic are some of the natural herbs and spices used to give the product the characteristic mountain aroma, while their properties also have antibacterial and antioxidant properties.

The result is a delicate charcuterie with a vivid ruby color that turns very dark when cut, with a rich and distinctive mouthfeel where you can perceive the fatty, light notes of blood with a final aftertaste of its clean slightly juicy texture that is gently enhanced of spices and wine notes.

It is a very nutritious sausage, by far the lowest in fat, rich in proteins, iron, minerals and vitamins, particularly easy to digest.
